Chipoltle Ginger Peanut Soup

Ginger Peanut Chipotle Soup

A fusion of flavors that gurantees warmth on a snowy day, this is a delicious and hearty winter soup. 

2 cups  chopped broccoli

2 cups chopped cauliflower

2 medium ( Sweet)Onions

4 chopped celery

4 carrots

3 potatoes peeled diced

1/2 cup dried barley

4 tsp of chipotle sauce  ( canned or bottled)  we like the flavor a lot

2 tsp of Honey

1/2 cup fresh herbs chopped Cilantro,or parsley

4  tbsp fresh  ginger, grated

6 cloves garlic, minced or crushed

1/2 tsp cayenne pepper

1 tsp soy sauce

2 tsp sea salt, or kosher coarse (may need more later)

grind black pepper about 10 turns to taste

4 tbsp olive oil

6 -8 cup  water

1  28-oz can diced tomatoes

5 tbsp peanut butter

 

Directions:

In large pot, sauteé onions in oil until soft. Add other veggies, ginger, garlic, cayenne pepper, salt, and pepper  etc  until veggies are just tender. Add  water, canned tomatoes, and peanut butter. Reduce heat and Simmer

Could also add some Coconut for a great flavor too..

Serves: 4-6

2 hours - 4 hours   ( soup taste better the longer it cooks)

We start a pot in the morning, and leave it on all day
